Strawberry & Bocconcini salad

This salad abounds with the fresh flavours of spring, and is the perfect start to a satisfying lunch.

Ingredients

  • 250 g Sabrosa strawberries
  • pea shoots, fo serving
  • 120 g bocconcini
  • 12 nasturtium flowers, to garnish
  • verjuice
  • A small handful coriander, finely chopped
  • 1 red chilli, seeded and chopped
  • 2 tbsp Wild blossom honey
  • olive oil, to drizzle
  • sea salt and freshly ground pepper, to taste

Cooking Instructions

  1. Mix the strawberries, pea shoots and cheese in a bowl. Pour over the dressing ( verjuice, coriander, red chilli, honey, olive oil, and sea salt and freshly ground pepper), toss and arrange on a plate.
  2. Garnish with nasturtiums.
