Cheesy melted club sandwich

Ingredients

  • 3 tbsp butter
  • 250 g woolworths streaky bacon, crisped in the oven
  • 100 g mature cheddar, sliced
  • woolworths oven roasted chicken breasts
  • 2 tbsp dijon mustard
  • 6 tbsp woolworths onion marmalade
  • 2 tbsp flour
  • 2 cups milk
  • 50 g mature cheddar, grated
  • salt and freshly ground black pepper, to taste

Cooking Instructions

  1. Slice the load open and spread the onion marmalade over the base before adding the crispy bacon. Add the sliced cheese then spread the mustard over.
  2. Top with the chicken breasts that have been sliced before adding the top of the bread with the cut side up.
  3. Prepare the cheese sauce by melting the butter then adding the flour, stir together for 30 seconds then start slowly adding the milk while whisking to prevent lumps.
  4. Add the grated cheese and continue whisking until all the cheese has been melted into the sauce. Season with salt and freshly ground black pepper to taste.
  5. Pour the sauce over the bread and place in the oven to grill for 10 minutes
