7 WAYS TO ENJOY CHICKPEAS:
Roasted chickpeas
Toss chickpeas in a mixture of olive oil, salt, pepper, paprika and chilli flakes. Bake at 180° until crisp. Serve as a snack or add to a salad.
Easy hummus
Blend chickpeas, garlic, olive oil, lemon juice, tahini (optional), cumin and salt until smooth and creamy.
Chickpeas & honey (yes, really)
Mix together chickpeas, chermoula, sun-dried tomatoes, olive oil and yoghurt. Chill until ready to serve, then drizzle with honey and garnish with mint.
Chickpea curry
Sauté garlic, ginger and vindaloo curry paste. Add coconut milk and simmer for 10 minutes. Add marrows, leeks and chickpeas and simmer for 5-10 minutes.
Chickpeas for breakfast
Pour beaten eggs into a non-stick ovenproof pan over a medium heat. Once the base has set, turn and top with blanched baby spinach and chickpeas. Place in the oven and cook until set and golden.
Chickpea pasta
Blend coriander, garlic, olive oil and a touch of seasoning. Heat in a pan with chickpeas, chopped sun-dried tomatoes, olives and capers. Give a quick final blend (sauce should still be chunky) and serve over pasta.
Chickpea patties
Mash up chickpeas and combine with yoghurt, curry powder, egg, breadcrumbs, spring onions and coriander. Flatten into patties, refrigerate for an hour and then fry.
