This veggie seed tart is simply terrific

Simple yet sophisticated, this vegetarian seeded tart – with butter beans, broccoli and almonds – makes for the perfect showstopper of a plant-based lunch.

INGREDIENTS

  1. Woolworths Breakfast Seed Mix: 250 g
  2. Fresh dates: 6
  3. Woolworths Butter Beans: 1 x 400 g can, drained and mashed
  4. Woolworths TenderstemTM Broccoli: 150 g
  5. Baby leeks: 6–8
  6. Olive oil
  7. Salt and freshly ground black pepper, to season
  8. Woolworths Medium Fat Plain Cream Cheese: 250 g
  9. Almonds: 100 g, toasted and chopped

METHOD

  1. Place the seed mix in a bowl and keep aside.
  2. Place the dates on a chopping board and remove the pips. Chop the dates finely, mix into the seed mixture and beans until well combined and sticky.
  3. Press the seed mixture into the bottom of a 20 cm tart dish to form a base.
  4. Heat a grill pan until very hot. Brush the broccoli and leeks with some olive oil and chargrill until slightly softer.
  5. Add the cream cheese to the base and lay the TenderstemTM and leeks on top.
  6. Top with the chopped almonds and drizzle with some olive oil.
