This veggie seed tart is simply terrific
Simple yet sophisticated, this vegetarian seeded tart – with butter beans, broccoli and almonds – makes for the perfect showstopper of a plant-based lunch.
INGREDIENTS
- Woolworths Breakfast Seed Mix: 250 g
- Fresh dates: 6
- Woolworths Butter Beans: 1 x 400 g can, drained and mashed
- Woolworths TenderstemTM Broccoli: 150 g
- Baby leeks: 6–8
- Olive oil
- Salt and freshly ground black pepper, to season
- Woolworths Medium Fat Plain Cream Cheese: 250 g
- Almonds: 100 g, toasted and chopped
METHOD
- Place the seed mix in a bowl and keep aside.
- Place the dates on a chopping board and remove the pips. Chop the dates finely, mix into the seed mixture and beans until well combined and sticky.
- Press the seed mixture into the bottom of a 20 cm tart dish to form a base.
- Heat a grill pan until very hot. Brush the broccoli and leeks with some olive oil and chargrill until slightly softer.
- Add the cream cheese to the base and lay the TenderstemTM and leeks on top.
- Top with the chopped almonds and drizzle with some olive oil.
