Non-dairy milks to try now

When thinking of non-dairy milks, do you stop at soya? Think again. These days, there are loads of delicious options on the shelf, including milk made from rice, almonds, coconut and even a blend of coconut and rice.

Not only are these milks a great option for those with lactose-intolerance, but they add unique and yummy flavours to dishes, especially baked goods, like this fuss-free tart.

No-bake coconut tart

For the raw nut crust: combine 1.5 cups each of ground almonds and pistachios with 60g desiccated coconut and 2.5 tablespoons coconut oil in a bowl or a food processor. Press firmly into a greased tart case and chill in the fridge to set. For the filling, bring 1 cup almond milk, 1/3 cup honey, 7 crushed cardamom pods and ½ teaspoon vanilla extract to a gentle simmer. Remove from heat. Squeeze the water from 3 softened gelatin leaves and add to 1 cup coconut milk and 1 cup coconut rice milk. Stir to combine, strain the mixture and pour into the tart crust. Chill overnight in the fridge to set. Decorate with edible rose petals. Cut into thin slices and enjoy!
