This nectarine & mozzarella salad is divine
This salad is basically summer on a plate. A riff on the classic caprese salad, it utilises sweet and juicy Flavourburst™ nectarines to form the perfect supper for warm summer days.
Tomato and Flavourburst™ nectarine salad:
Ingredients:
- 1 x 350 g punnet Woolworths Exotic Tomatoes, sliced
- 200 g Woolworths Vine Tomatoes
- 2 Israeli tomatoes, cut into wedges
- 3 Woolworths Flavourburst™ White Flesh Nectarines, sliced
- 3 Woolworths Flavourburst™ Yellow Flesh Nectarines, sliced
- 2 T red wine vinegar
- 3 T olive oil
- Sea salt and freshly ground black pepper, to taste
- 2 balls Fior di Latte mozzarella, torn
- Fresh basil, for serving
Method:
- Toss all the ingredients except the basil. Marinate at room temperature for half an hour. Toss again, then top with the basil.

Watermelon-and-lime Agua Fresca
Ingredients:
- 2 Woolworths Watermelon Snack Pots, frozen
- Lime 1, juiced
- Water a splash
- Woolworths Sugar Free Sparkling Flavoured Water 2 x 500 ml bottles
Method:
- Blend the watermelon and lime juice with a splash of water in a Nutribullet or food processor until it resembles a slushie.
- Serve topped up with your favourite Woolworths Flavoured Sparkling Water – try rose, strawberry or even coconut.
