2 fantastic peanut butter based snacks

Fact: Peanut butter is one of the most underrated yet versatile products you have in the pantry. And just to prove our point, we bring you these quick peanut butter muffins, and a deliciously chewy peanut butter snack bar. Get munching!

Easy peanut butter muffins

Ingredients:

  • 280 g flour
  • 1 T baking powder
  • 1 t ground cinnamon (optional)
  • 1 egg
  • ⅓ cup sunflower oil or light olive oil
  • 1 t vanilla extract
  • ¾ cup maple syrup
  • ¼ cup milk
  • ½ cup Woolworths Smooth Peanut Butter
  • Peanuts for sprinkling (optional)

Method:

  1. Preheat oven to 180C°. In a bowl, mix dry ingredients together.
  2. In another bowl, mix wet ingredients together.
  3. Add the wet ingredients to the dry and stir to combine.
  4. Scoop the batter into muffin tray and bake for 25 minutes until an inserted skewer comes out clean. Sprinkle with chopped peanuts (optional).

Peanut butter puffed rice bars

Preparation time: 20 minutes, plus setting time in the fridge

Cooking time: 5 minutes

Method:

  1. In a food processor, blend dates, peanut butter and vanilla extract until smooth (add some hot water to loosen if needed to make a caramel of sorts).
  2. Fold through the puffed rice cereal and desiccated coconut until evenly coated. Press the mixture into a shallow dish and pat down firmly to secure.
  3. Melt the chocolate and spread evenly over the top, place in the fridge to set for an hour or two before cutting into bars and storing in the fridge for quick and easy sweet treat.
