A ‘more please’ kind of salad

A fritter salad? Now that’s something the kids will enjoy as much as the adults – a whole lot of plant-based deliciousness.

INGREDIENTS:

  • Woolworths Sweetcorn, Apple & Fresh Coriander Fritters
  • Woolworths Baby Marrow Spaghetti: 350 g
  • Radishes: thinly sliced
  • Woolworths Red Salad Onions: 75 g
  • Celery leaves: roughly chopped
  • Woolworths Creamy Honey & Mustard Dressing
  • Sunflower seeds: toasted

METHOD:

  • Preheat oven to 180C. Place corn fritters on a baking tray, then place in the oven for 5–10 minutes until heated through.
  • Place the remaining ingredients in a large bowl and toss, making sure that the vegetables are well coated in the dressing.
  • Arrange salad on a platter, top with heated fritters then garnish with sunflower seeds and serve.
