A ‘more please’ kind of salad
A fritter salad? Now that’s something the kids will enjoy as much as the adults – a whole lot of plant-based deliciousness.
INGREDIENTS:
- Woolworths Sweetcorn, Apple & Fresh Coriander Fritters
- Woolworths Baby Marrow Spaghetti: 350 g
- Radishes: thinly sliced
- Woolworths Red Salad Onions: 75 g
- Celery leaves: roughly chopped
- Woolworths Creamy Honey & Mustard Dressing
- Sunflower seeds: toasted
METHOD:
- Preheat oven to 180C. Place corn fritters on a baking tray, then place in the oven for 5–10 minutes until heated through.
- Place the remaining ingredients in a large bowl and toss, making sure that the vegetables are well coated in the dressing.
- Arrange salad on a platter, top with heated fritters then garnish with sunflower seeds and serve.
