Veggies you didn’t know you could braai

When it comes to grilling veg on the braai we tend to think of grilled corn and stop there. But unlikely veggies like exotic mushrooms, red onions and baby brinjals grill up a treat and make for great sides. Time to get yo’ grill on.

Exotic mushroom steaks with mozzarella:

Brush exotic mushroom kebabs and king oyster mushroom steaks with 50 g melted butter. Season and add fresh thyme. Braai over hot coals, turning until golden. Tear over pieces of bocconcini till they melt, and serve hot.

Bacon-stuffed red onions:

Scoop out the inside of 6 boiled red onions. Chop the cores and fry with yummy things like garlic, fresh sage, crème fraîche and chopped bacon. Stuff this mixture back into the onions, and top with fresh cheese sauce. Cook in a skillet over the coals until tender and bubbly. Yum!

Baby brinjals with yoghurt:

Grill 12 baby brinjals in the coals or over a flame. Blister until blackened and soft.

Dust off any ash, then drizzle with olive oil and add a squeeze of lemon juice. Season and serve with 2 tablespoons plain yoghurt, 1 teaspoon nut butter, fresh coriander and toasted sesame seeds.
