Braai like a boss

Summer’s almost here, so let’s braai! Micasa frontman and chef J’Something shows off three clever tricks to take your braai to the next level.

1. Easy squeezy: Halve some lemons and chuck them on the grill. This gives them a great smokey flavour, and because they’re heated, you’ll get a lot more juice from the fruit.

2. If you’ve got fish on the braai, go very easy on the marinade. Cook the fish skin-side down until it comes loose on its own, then turn over and grill for just another minute. Now’s the time to get busy with that marinade – brush it over the fish, and let those lovely juices sink in.

3. Use the leftover juice from veggies like grilled beetroot to make a killer dressing – simply add a glug of olive oil and balsamic vinegar, mix and you’re good to go!
