Easy and delicious savoury rice

There’s just something so comforting about a big scoop of savoury rice. This recipe by Abigail Donnelly is as easy as it is delicious.

Savoury rice

Serves 4
Preparation: 15 minutes
Cooking: 20 minutes

Ingredients:

  • 1 T olive oil 
  • 2 T butter 
  • 2 onions, chopped
  • 1 red pepper, chopped
  • 4 garlic cloves, chopped
  • 2 t onion flakes
  • 150 g portabellini mushrooms, halved
  • 80 g frozen peas 
  • 2 cups long-grain white rice or basmati rice, cooked in chicken or vegetable stock
  • Salt, to taste
  • 3 T fresh parsley, chopped
     

Method:

  1. Heat the oil and butter in a large pan.
  2. Sauté the onions and red pepper over low heat until soft and golden brown. Add the garlic and onion flakes and cook for 2 minutes.
  3. Add the mushrooms and fry for 4 minutes.
  4. Toss in the peas and rice. Cook for 8 minutes, stirring, so it doesn’t stick.
  5. Season to taste and stir through the parsley.
