Easy and delicious savoury rice
There’s just something so comforting about a big scoop of savoury rice. This recipe by Abigail Donnelly is as easy as it is delicious.
Savoury rice
Serves 4

Ingredients:
- 1 T olive oil
- 2 T butter
- 2 onions, chopped
- 1 red pepper, chopped
- 4 garlic cloves, chopped
- 2 t onion flakes
- 150 g portabellini mushrooms, halved
- 80 g frozen peas
- 2 cups long-grain white rice or basmati rice, cooked in chicken or vegetable stock
- Salt, to taste
- 3 T fresh parsley, chopped
Method:
- Heat the oil and butter in a large pan.
- Sauté the onions and red pepper over low heat until soft and golden brown. Add the garlic and onion flakes and cook for 2 minutes.
- Add the mushrooms and fry for 4 minutes.
- Toss in the peas and rice. Cook for 8 minutes, stirring, so it doesn’t stick.
- Season to taste and stir through the parsley.
