Morogo

INGREDIENTS

  • 1 medium onion, chopped
  • 400 g Woolworths Bulk Swiss Chard Spinach or Morogo
  • 2 large potatoes
  • 2 carrots
  • 1 tsp Woolworths Mild Curry
  • 1 cup boiling water
  • salt & pepper to taste

METHOD

Wash and chop the spinach/morogo into small chunks.

Chop potato and carrots then add them to a large pot, followed by onions and spinach. Make sure to add the spinach last as the potatoes and carrots take longer to cook.

Add cup of water over the spinach and cook over a medium heat for 15-20 minutes, stirring occasionally until the water runs dry.

Serve hot with pap, or as a side to a stew.

NOTE: "Morogo" refers to a group of at least three different dark green leafy vegetables found throughout Southern Africa, so if you can't find your desired leaves, you can use Swiss chard or beetroot/pumpkin leaves.
