3 irresistible banana-based treats
The humble banana really shines in dishes like smoothies, simple baked goods, and a hot oats brekkie. Added to that, these treats will go over really well with the young ones.
- Arrange sliced bananas on baking paper and freeze. Once frozen, pop the bananas into a blender along with fresh berries, and a scoop of yoghurt. Blend until creamy and voila, instant froyo!
- Cream 180 g brown sugar and 125 g butter. Sift in ¼ tablespoon baking powder and 210 g flour. Add two eggs and fold, followed by 4 mashed bananas, 100 g desiccated coconut and ¼ cup maple syrup. Mix well and spoon the batter into a greased medium loaf tin. Sprinkle with coconut, and bake at 160°C for 1 hour until skewer comes out clean. Slice and eat warm. Try not to drool.
- Cook oats in water and add milk to taste once the oats have swelled. Enjoy with sliced bananas, milk, and a drizzle of maple syrup. Now that’s a power breakfast.
