How to add snap and sizzle to your soups

Soup weather’s coming up, which is why we’ve got some delicious ideas to add a bit of snap & sizzle to your store-bought soups.

Massaman butternut & sweet potato soup

Add a sachet of Blue Elephant Massaman Curry Paste to a large saucepan with a generous drizzle of oil. Fry over medium heat for a minute or two before adding the contents of one Woolworths Butternut & Sweet Potato Soup Kit, keeping the celery leaves aside. Stir to coat. Add 1 can of coconut milk and 500 ml chicken stock. Bring to a simmer and cook for 20 minutes, or until the vegetables are just softening but still have a bite. Thinly slice 1 red onion, then massage the juice of one lime and a generous pinch of sea salt into the onion. Set aside to marinate for a minute or two, then serve with the soup, along with salted peanuts, 1 sliced fresh chilli and 10 g fresh chopped coriander.

Farmhouse chicken soup with fried toast

Heat a packet of Woolworths Farmhouse Chicken Soup in a saucepan until warmed through. In the meantime, fry slices of sourdough bread in a hot pan with butter, or a drizzle of olive oil, until golden brown and toasted. Serve with sliced, ripe avocado and blanched, smashed peas. Season, drizzle with lemon juice and serve with the soup. Drizzle a splash of olive oil over the soup and sprinkle with Woolworths Crispy Onion Bits.

Tomato soup with cheesy dippers

Thickly slice a loaf of Woolworths Heat & Eat Ciabatta. Cut the slices into thick soldiers, arrange on a baking tray and drizzle with olive oil. Toast under the grill. Sprinkle over a mix of mature cheddar and white cheddar, and grill again until melted. Serve warm with hot bowls of Woolworths Canned Tomato Soup.
