Kitchen Craft Episode 27: Crackle Cookies

Simple to make and so darn cute, these crackle cookies by Chef Clem should definitely become part of your weekend baking plans. Plus, they make for great edible gifts!

Colourful crackle cookies

  • Makes about 15
  • Preparation: 15 minutes
  • Cooking time: 10 minutes

Ingredients:

  • 225 g butter, softened 
  • 400 g sugar
  • 4 free range eggs, at room temperature
  • 3 t caramel essence
  • 3 ½ t baking powder
  • 4 ½ cups of cake flour
  • Food colouring, various colours
  • Icing sugar for dusting

Method:

  1. Preheat the oven to 180C.
  2. Combine the butter and the sugar, creaming the two until the butter becomes light in colour and fluffy in texture. 
  3. Add the eggs, stirring them into the mixture one at a time. Stir through the caramel essence, then add the baking powder and a third of the flour. 
  4. Mix together, then add another third of the flour and mix again. Combine the remaining flour and ensure no pockets of flour are stuck at the bottom of your mixing bowl. 
  5. Divide the batter equally into the amount of colours you’ll be making. Mix in the food colouring, then chill the batter in the fridge for 45 minutes. 
  6. Using 2 tablespoons, shape small balls of the cookie batter. Give them a good coating of icing sugar and place it on a baking tray lined with baking paper. Be sure to give the cookies enough space to spread while baking. Bake for 8–10 minutes.
