How to build the perfect tomato tart
How to build the perfect savoury tart: use some readymade pastry, layer it with fried exotic tomatoes, add a cream filling and a whole lotta cheese, and pop it in the oven. It’s almost too easy.
Method:
- Heat the oven to 180°C.
- Slice your favourite exotic tomatoes in half and leave some of the small ones whole.
- Pan fry the tomatoes in 2 tablespoons olive oil with seasoning, until they just start to colour.
- Take 3 separate layers of Woolworths Phyllo Pastry and brush with melted butter.
- Layer them on top of each other in a greased tray.
- Fold up the edges to create a rim.
- Whisk together 1½ cups cream with 2 large beaten free range eggs and season.
- Pour the mix into the pastry.
- Arrange the fried tomatoes in the tray and dot with pieces of cheese of your choice, like Boursin or a soft goat’s cheese.
- Add some grated pecorino or parmesan on top.
- Bake until puffed up, golden and set.
- Serve with fresh basil.
