How to build the perfect tomato tart

How to build the perfect savoury tart: use some readymade pastry, layer it with fried exotic tomatoes, add a cream filling and a whole lotta cheese, and pop it in the oven. It’s almost too easy.

Method:

  1. Heat the oven to 180°C.
  2. Slice your favourite exotic tomatoes in half and leave some of the small ones whole.
  3. Pan fry the tomatoes in 2 tablespoons olive oil with seasoning, until they just start to colour.
  4. Take 3 separate layers of Woolworths Phyllo Pastry and brush with melted butter.
  5. Layer them on top of each other in a greased tray.
  6. Fold up the edges to create a rim.
  7. Whisk together 1½ cups cream with 2 large beaten free range eggs and season.
  8. Pour the mix into the pastry.
  9. Arrange the fried tomatoes in the tray and dot with pieces of cheese of your choice, like Boursin or a soft goat’s cheese.
  10. Add some grated pecorino or parmesan on top.
  11. Bake until puffed up, golden and set.
  12. Serve with fresh basil.
