Your foolproof fish braai

There’s no need to fear the fish braai  – all you need is a clean grill, a bit of patience and our foolproof and super-fragrant recipes. And of course a fine piece of fish

1. Lemony hake

Hake on the braai is delicious, but this tender fish needs a little help to stay in one piece.

Wrap the hake fillet in blanched leek leaves. Add lemon slices, garlic and melted butter. Wrap again in foil and braai for 35–45 minutes, turning often. Open up and present at the table in the foil and leeks.

2. Snoek for the win

Get creative by stuffing your snoek with 3 sliced garlic cloves, 1 chopped chilli, half a sliced red onion, fresh thyme and 2 tablespoons melted butter. Close up the fish and carefully braai over medium to hot coals. For turning: wrap in foil or secure in a sandwich-style grid to turn.

Tip: Char lemons on the braai, to release juice for easy squeezing.

3. Angelfish loves a basting

Don’t marinate this fish, simply brush with olive oil and season. Braai skin side down on medium hot grill. When cooked, the flesh will turn opaque and release from grill by itself. All you need is a nice clean grill, and patience. Once fish is cooked through, grill for another minute on the other side, and then baste with Woolworths Garlic & Herb marinade. So good!
