This Thai-inspired chicken satay traybake is fantastic

Here’s a great tray bake recipe to add to your ‘weeknight wonder’ list – easy Thai satay chicken with noodles. It’s really quite ridiculously delicious.

Thai-inspired chicken satay traybake

Preparation: 10 minutes 
Cooking: 50 minutes

Ingredients:

For the satay:

  • 8 Woolworths Free Range Chicken Portions
  • 1 x 200 g pack Woolworths Ramen Noodles, cooked to package instructions 
  • Roasted peanuts, for serving
  • Sliced red onions, for serving
  • Freshly sliced chilli, for serving
  • Fresh coriander, for serving
     

Method:

  1. Preheat the oven to 180C. Whisk the sauce ingredients. Place the chicken in a deep roasting pan and pour over the sauce. If you have time, marinate for 30 minutes. Roast for 40–50 minutes, or until the chicken is cooked through and golden. 
  2. Serve with noodles, peanuts, red onions, chilli and coriander.
