Beef stew with canned samp and beans

Ingredients:

  • 2 T Olive oil
  • 4 garlic cloves, crushed
  • 4 leeks, roughly chopped
  • 1 onion, quartered
  • 2 rosemary sprigs
  • 500 g beef cubes
  • 2 T tomato paste
  • 1 can whole tomatoes
  • 500 ml beef stock
  • 4 sweet potatoes, boiled
  • 3 T garlic butter
  • salt to taste
  • pepper to taste
  • 1 can samp and beans

Method:

  • To prepare the beef stew, fry the garlic, leeks, onions and rosemary in the olive oil on medium heat. 
  • Add the beef and fry until slightly caramelised.
  • Add the tomato paste, the canned tomatoes, beef stock and simmer for 15 minutes. Season
  • Add samp and beans.
  • Combine the boiled sweet potatoes with the garlic butter. mash together and season.
  • Serve hot with bread that has been that has been prepared as per packaging instructions.
  • Secret ingredient: Red wine vinegar. Deglaze the stew with red wine vinegar.
