Beef stew with canned samp and beans
Ingredients:
- 2 T Olive oil
- 4 garlic cloves, crushed
- 4 leeks, roughly chopped
- 1 onion, quartered
- 2 rosemary sprigs
- 500 g beef cubes
- 2 T tomato paste
- 1 can whole tomatoes
- 500 ml beef stock
- 4 sweet potatoes, boiled
- 3 T garlic butter
- salt to taste
- pepper to taste
- 1 can samp and beans
Method:
- To prepare the beef stew, fry the garlic, leeks, onions and rosemary in the olive oil on medium heat.
- Add the beef and fry until slightly caramelised.
- Add the tomato paste, the canned tomatoes, beef stock and simmer for 15 minutes. Season
- Add samp and beans.
- Combine the boiled sweet potatoes with the garlic butter. mash together and season.
- Serve hot with bread that has been that has been prepared as per packaging instructions.
- Secret ingredient: Red wine vinegar. Deglaze the stew with red wine vinegar.
