




INGREDIENTS:
4 ostrich burgers
3 T olive oil
250 g brown mushrooms
2 cloves garlic, thinly sliced
245 g halloumi, sliced
50 g flour
4 wholewheat rolls
120 g hummus
Flavourburst Crimson Microleaf Salad, to serve
fresh basil pesto, to serve
Thick Hand-cut Chips, to serve
COOKING INSTRUCTIONS:
Pan-fry the burger patties on a griddle pan in 1 T olive oil until nicely charred and cooked through.
Fry the brown mushrooms with the garlic and 1 T olive oil for 2 to 3 minutes until cooked and set aside.
Dust the halloumi in flour and fry in a non-stick pan in the remaining olive oil for a few seconds on each side until golden brown.
Remove from the heat and drain on kitchen paper.
Serve the patties on wholewheat rolls with a dollop of hummus and crimson microleaves, topped with basil pesto, garlic mushrooms and some more leaves.
Serve with a side of thick hand-cut chips and an icy cold beer.
