CHICKEN MINESTRONE SOUP

Place vegetables, water and stock in a large pot. Simmer until beans and veggies are soft. Add the chicken breast and beans together with the brine and simmer for 6 minutes. Check seasoning, garnish with grated parmesan and serve immediately with sourdough bread.

BUTTER CHICKEN SOUP WITH NAAN

While heating the soup, melt the ghee in a pan with the curry leaves.   Scatter over the soup with the ghee. Garnish with chilli and coriander and serve with naan bread.

TOMATO SOUP WITH GNOCCHI

Heat the soup according to package instructions.  Fry the gnocchi in the butter. Heat the garlic bread according to package instructions. Serve with the soup and gnocchi, garnished with sage leaves.

Place the soup vegetables, stock and bay leaves into a pan.  Cover and simmer for 15 minutes. Add the chicken pieces and cover.  Simmer for 10 minutes and season.  Serve with the dombolo to soak up the soup.

VEGETABLE SOUP WITH SAMP AND MARROW BONES 

Cook the soup according to package instructions.  Roast the beef marrow bones in the beef stock for 40 minutes at 180°C, covered.  Add the bones and broth to the veggies, then add the samp and beans and heat through.  Season to taste.
