You will need:
60ml extra virgin olive oil
1 small red onion, chopped
2 cloves garlic, chopped
5ml paprika
1ml cayenne
4 small tomatoes, skinned and chopped
1 bay leaf
15ml sugar
Sea salt and freshly ground black pepper
2 organic potatoes, washed and sliced into wedges
Sunflower oil, for deep-frying
