Beef Carpaccio

Serves 4

You will need:

400g beef fillet, chilled
Salt
Pepper
Extra virgin olive oil
Lemon juice
90g rocket
100g shaved Parmigiano Reggiano

Here’s how:

  • Using a sharp knife, slice the beef into paper-thin slices.
  • Arrange the sliced beef on individual plates so that it overlaps slightly.
  • Season with salt and pepper.
  • Drizzle with extra virgin olive oil and a little lemon juice.
  • Top with rocket and shaved Parmigiano Reggiano.
  • Finish it just before serving with warm, crusty Italian bread.

Cooks note
The fillet can be plated and tightly covered with plastic wrap and kept in the refrigerator until needed.
