Here’s how:

Rub oil generously over the top side of your spade and place on the fire to heat up. coat your steak with a little oil and rub generously with steak rub so that it is well coated on both sides. Once your spade starts smoking, place your space on the upright, oiled side. For extra flavour, pour a little brandy into the spade and allow it to catch alight (flambé). Turn your steak once during cooking and repeat the brandy step. See guide on printable recipe for cooking times. Leave to rest for 10 mins before slicing or serving.

To serve: Slice and add to you’re starter platter if serving as a snack.
