Butter Lettuce, Butternut, Moroccan Sweet Potato and Chickpea Salad with Goats Cheese & Pumpkin Seed, Lemon and Honey Vinaigrette

Serves: 4 - 6

You will need:
1 packet butter lettuce and butternut salad
1 pack Moroccan sweet potato and chickpea salad
1 pack of goats cheese (plain or with herbs)
Pumpkin seed, lemon and honey vinaigrette

Here’s how:

Empty your packet of butter lettuce and butternut salad and your Moroccan sweet potato and chickpea salad into a salad bowl and toss together. Slice slices of goats cheese into your salad. Set aside.

To serve: Just before serving, shake your pumpkin seed, lemon and honey vinaigrette well and drizzle lightly over the salad for delicious flavour.
