Veggies Frittata

Makes 4 portions

You will need:
Cooking Olive oil
1 small onion, finely chopped
1 cube frozen garlic
½ red pepper diced
200 g fresh fish (or tinned tuna) in water, drained and flaked
250 g frozen peas
5 large free range eggs
45 ml double cream
45 ml Cheddar, grated

Here’s how:

Preheat the grill.

How to make the Veggie Frittata:
Heat the cooking olive oil in a pan. Add the onion, garlic and red pepper. Stir-fry for 3 minutes. Add the fish and peas.

Mix the free range eggs and cream. Pour over the above and cook for 5 minutes till the base is set.

To serve:
Sprinkle cheese on top and place under a grill till golden brown and set. Remove from grill and serve.

Cook’s note:
Replace peas with asparagus.
